2 pounds steak tips
4 tablespoons oil, divided
¾ cup chopped onion
1 clove garlic, minced
1 can (28 oz.) Tomatoes, undrained
1 teaspoon oregano
1 teaspoon salt
¼ teaspoon pepper
1 pound fresh mushrooms, sliced
1 medium eggplant, diced
2 medium zucchini, sliced

Directions:
Directions:
Cut beef into 1 inch cubes. And heavy sauce pot, brown beef on all sides in 2 tablespoons of oil. Remove meat. Add two more tablespoons of oil and sauté onions and garlic for one minute. Return meat to pot. Add remaining ingredients. Bring to a boil, stirring often. Reduce heat and simmer, covered, for one hour.
