Vegetable oil
1 1/2 cups of all purpose flour
1 1/4 cups of rice flour
2 1/2 tsp of baking powder
1 tbs Montreal steak seasoning [not low sodium]
1 12 oz bottle of beer chilled
1/2 cup seltzer chilled
2 sweet onions [Vidalia] sliced into 1/2 inch thick rings
salt and pepper to taste
3 large cloves of garlic minced
1 1/2 tbs smoked paprika

1. Heat 3 inches of vegetable oil in a large dutch oven over medium high heat until the deep fry thermometer registers 365F. Meanwhile preheat the oven to 200F and set a rack on a rimmed baking sheet to drain the excess oil after frying.

2. Whisk 1 cup all-purpose flour, the rice flour, baking powder, steak seasoning, garlic paprika, and 1/2 teaspoon salt and pepper in a large bowl. Whisk in the beer and seltzer until mostly smooth. Let sit 5 minutes to thicken. Place the remaining 1/2 cup all purpose flour in a shallow bowl.

3. The onion rings will need to be fried in small batches. Dredge the onion rings in the flour then dip in the beer batter, letting the excess drip off . Fry until crisp and golden brown flipping occasionally for 3 to 6 minutes. Place on the race in the oven using a slotted spoon. Season with salt and pepper. Leave fried onions in the warm oven while you fry the remaining batches.
