3 boneless, skinless chicken breasts, chopped or shredded
frozen mixed vegetables
1/2 onion, chopped fine
1 stalk celery, chopped fine
1 carrot, chopped fine
S&P to taste
powdered chicken stock to taste (Gayle used Knorr©)
1 can cream of chicken soup
1/2 large bag or 1 small bag of Tater Tots©

Directions:
Directions:
Cook Tater Tots© until until golden and crispy, then set aside. You want enough tots for the top and bottom of the pie.

Cook chicken until no longer pink, add vegetables and cook until tender, mix in salt, pepper, chicken stock to taste, then add cream of chicken soup and a little bit of water to loosen a bit.

Layer tots on the bottom of casserole dish, then chicken mixture, then top with tots.

Bake at 350ºF. until bubbling and heated through.
