head of crisp lettuce, washed and chopped
chopped tomatoes, onions, green peppers and jicama (if it isn't too expensive)
can of garbanzo or light red beans, drained
1 lb ground beef, cooked and drained
Catalina dressing
cheddar cheese
sour cream
crushed tortilla (nacho) chips

Directions:
Directions:
Toss lettuce and chopped veggies in a large salad bowl. Add beans cooked ground beef and cubed cheddar cheese. Dress with Catalina dressing (NO substitutes!). Add dressing and toss again. Serve with sour cream and crushed chips.

Betsy Kissinger's recipe now commonly called "Taco Salad". The Kissinger's lived across our backyard in Marshfield. Mom LOVES this salad, and is adamant about two things in the recipe: Don't use jicama if it's over $1.39/lb, and ONLY use Catalina dressing!
