2 corn tortillas cut in strips and halved
semi pearl farro
4 radishes
1 avocado
1 orange
1 lime
1 sweet potato diced
lb. broccoli florets
1 chipotle pepper in Adobe minced
1 oz. queso fresco
1 shallot
1 T agave nectar or honey

Boil farro 16-18 min. Drain and return to pot. Stir in juice of of lime, drizzle of olive oil and salt and pepper.combine minced pepper with broccoli and sweet potato. Add olive oil, salt and pepper and toss to coat. Put in single layer on foil lined baking sheet. Roast 20-22 min. @ 350 and transfer to pot of farro.
Combine radishes minced shallots, agave and juice of the rest of the lime and salt and pepper. Let sit 10 min.
Place strips of tortillas on sheet, drizzle olive oil. Bake in single layern5-7 min. Til brown and crispy.
Add chopped orange, chopped avocado and radish mixture to farro. Top with cheese and tortilla strips.
