Pre-heat oven to 350º

Sweet Potato Mixture

5 or 6 sweet potatoes, cooked

½ cup sugar

2 eggs

½ cup butter, softened

1 Tablespoon vanilla extract

Topping

¾ cup brown sugar

¾ cup pecans, chopped

⅓ cup flour

⅓ cup of butter. softened

1 2 quart casserole

Pre heat oven to 350º

Place sweet potatoes sugar, eggs, butter and vanilla in a large mixing bowl.

Beat with electric mixer for about 2 minutes until fairly smooth

Spoon into a greased 2 quart casserole dish

Prepare the topping

Place brown sugar, chopped pecans, flour and butter into a small mixing bowl.Mix with a fork until topping is blended together into large crumbs

Sprinkle topping evenly over the sweet potato mixture.

Bake at 350º for 30 minutes until heated through
