3 c diced potatoes
1 c water
½ c celery, diced
½ c carrots, diced
¼ c chopped onion
1 tsp parsley flakes
1 chicken bouillon cube
½ tsp salt
Dash of pepper
1½ c milk
2 tbsp flour
½ lb Velveeta cheese, cubed or some sharp cheddar cheese

Directions:
Directions:
In large saucepan combine potatoes, water, celery, carrots, onions, parsley flakes, bouillon cube & seasoning; mix well. Cover, simmer 15-20 minutes or until vegetables are tender. Gradually add milk to flour mixing well until blended. Add milk mixture to vegetables, cook until thickened. Add cheese until melted.

(Also good without cheese)
