Pickled Sweet Beets Recipe

2 c sugar
2 c water
2 c vinegar
1 tsp. cloves
1 tsp. allspice
1 Tbsp. cinnamon
Onions, sliced/chopped

Select small, young beets. Wash. Leave 3 inches of tops on and roots. Boil until skins slip easily (about 15 min) Put into cold water. Remove skins, tops and root.
Pack cubed or sliced beets into jars to within inch of top. layering with sliced onions
Bring to boil top ingredients, pour boiling syrup over beets to inch of top of jar.
Process 30 min. in boiling water bath.
Set jars upright on cutting boards or wash towels, let stand until lids pop/seal.
