Sauce
1 small onion chopped
1 clove garlic minced
¼ C water
¼ C chopped green chili
½ T chili powder
½ tsp. Cumin
¼ tsp. Coriander
Dash cayenne
8 oz. tomato sauce
¼ C tomato paste
1 C water

Filling
1 small onion chopped
½ C chopped green pepper
¼ lb. mushrooms chopped
½ C water
½ C corn
1 C chopped zucchini
½ tsp. Cumin

Sauce
Sauté onions and garlic in ¼ C water 5 min. Add chilis and spices. Stir and sauté a few minutes more.
Add tomato sauce, paste and 1 C water mix well, simmer 15 min. Set aside.

Filling
Sauté onions, peppers and mushrooms in water 5 min. Add corn, zucchini, and spices. Sauté 10 more min.
Preheat oven to 350º. Spread 1 C sauce in bottom of casserole dish. Roll ⅓ to½ C filling in each tortilla then put burritos on sauce. Pour rest of sauce over top. Cover, bake 30 min.
