2-4 pieces of veal scaloppini
1/4 t Salt
1/4 t Pepper
1/4 t oregano
1/4 t basil
1/4 c of flour
Butter
1c Marsala wine (Saperone Marsala wine available at the LCBO)
4-6 Crimini or 2 Portobello mushrooms sliced
½ c beef stock

- Beat the veal between 2 pieces of saran wrap with a meat tenderizer
- Mix together salt, pepper and flour, on a plate
- Cover both sides of the veal with the flour mixture
- Put butter in frying pan, fry veal 1 minute each side, being careful not to burn the butter
- Add amount of marsala wine
- Cook and turn the veal in the wine for 1-2 minutes
- Arrange the veal on a platter
- Brown the mushrooms in butter in a separate fry pan
- Pour the beef stock in the frying pan, scrapping the pan as it is boiling
- Put the mushrooms on top of the veal
- Pour the beef stock of the mushrooms and veal

This is Uncle Brian's favorite. I made it for him for our first anniversary to make up for the fact that I flat out forgot it was our anniversary until he wished me a happy anniversary when we woke up that morning. I think it still his favorite thing that I make.
