6 T butter
2 onions, chopped
2 cloves garlic, minced
1 lb. ground beef
4 carrots sliced
1½ T tomato paste
2 parsley chopped
1 T thyme
1 bay leaf
1½ C beef stock
Salt and pepper
6 medium potatoes
¼ swiss or cheddar cheese

Directions:
Directions:
Heat 2 T butter in a skillet and sauté the onions, beef and garlic over moderate heat for 10 min.
Add carrots, tomato paste, herbs and stock. Add salt and pepper. Bring to boil, then simmer til most of stock has evaporated, about 20 min. Discard the bay leaf.
Peel and boil the potatoes until tender, about 20 min. Transfer to bowl and mash with remaining butter and salt and pepper to taste.
Heat oven to 375º spoon the meat mixture into casserole dish, top with mashed potatoes and sprinkle cheese on top.
Bake for 15 min.
