2 tbsp butter
2 tbsp olive oil
1 small onion
3 boneless, skinless chicken breasts
lime juice
1 cup chicken broth
2 tbsp curry powder
Coconut milk

Directions:
Directions:
Soak chicken in lime juice for ½ an hour before cooking.
Slice chicken and cook in pan with butter and oil.
Scoop chicken out of pan and set aside on a plate.
Place chopped onion, curry and chicken broth in butter/oil mixture and cook until bubbly then turn down to medium heat.
Add some coconut milk (shake well). After it thickens add a bit more coconut milk and stir for 2 minutes.
Re-add chicken to the mixture with a bit of lime juice and turn down to low heat and cover pan.

Cook until chicken is done.
