2 frozen pie shells - deep dish
4 to 5 large tomatoes- Approximately 2 for each pie
The same amount goes for onions (sweet)
1 bag of shredded mozzarella cheese
1 bag of shredded cheddar cheese
Greek Italian Seasoning Salt
Paprika

Directions:
Directions:
Peel tomatoes, slice and pat dry with paper towels.
Sprinkle both sides of tomatoes with Greek Seasoning Salt.
Place in the following order in the deep dish pie pie shells:
1st Layer: Layer tomatoes, onions and mozzarella cheese.
2nd Layer: Layer tomatoes, onions and cheddar cheese.
Spread mayonnaise on top of pie.
Sprinkle paprika on top of pie.

Pre bake pie shell at 400º for 10 minutes.
Bake pies at 350º for 45 minutes.

We would have annual end of year dinners to appreciate our employees when I worked at Harris County School System. This particular recipe was brought in by Karen Townsend, one of our bus drivers. It was an immediate hit! Enjoy!!!
