1/3 cup vegetable oil
1 large onion, diced
2 ribs celery, diced
1 . green bell pepper, diced
1 Tbsp garlic, minced
2 tsp dry thyme
2 tsp dried oregano
2 bay leaves
2 Tbsp Cajun spice blend
1 tsp Gumbo file
1 28 oz can peeled and diced tomatoes
1/2 cup tomato paste
5 cups clam juice or shellfish stock
1-2 lbs peeled and deveined shrimp
Salt and pepper to taste
Tabasco and Worchester sauce to taste

Over medium high heat ad oil and cook onions, celery and peppers for 5-7 minutes. Add garlic, thyme, oregano, bay and Cajun spice blend, continue to cook 2-3 minutes longer.
Add tomato product and stock, bring to boil then reduce heat to a simmer, cook 30 minutes.
Add shrimp and simmer 5-10 minutes or until shrimp are cooked through.
Adjust seasonings and serve.
