1 cup fresh raspberries
1 cup quartered strawberries
1 cup blackberries
1 cup miniature grapes
2 envelopes unflavored gelatin
2 cups champagne, divided or sparkling white grape juice
1/4 cup sugar
1 vanilla bean cut lengthwise
Garnish with champagne grapes and fresh mint

Directions:
Directions:
Place of each fruit into silicone heart shape mold. Place in refrigerator until ready to use. In a medium bowl, sprinkle gelatin over 1/2 cup cold champagne. Let soften one minute.
In small saucepan, combine 1 1/2 cups champagne, sugar and vanilla bean. Bring to a boil, remove from heat. Add to cold gelatin mixture, whisking to dissolve gelatin. Remove mold from refrigerator and pour mixture over berries to submerge them completely. Refrigerate until firm, about 3 hours. To serve, gently unmold hearts loosening edges of gelatin. Invert onto a platter or an individual plate. Garnish with champagne grapes and fresh mint, of desired.
