1 lb. Powdered Sugar
1 medium potato cooked and mashed (approx. 1/4 cup of leftover mashed potatoes)
1 tsp. vanilla
1 jar peanut butter


Directions:
Directions:
Combine all ingredients (Put the mashed potato in the bowl and gradually add the powdered sugar until the consistency is like pie crust. It takes nearly all the sugar)
Divide batter into 4 balls
Roll out each ball (one at a time) on wax paper using powdered sugar to keep from sticking
Roll to about 1/4" thickness.
Spread with a thin layer of peanut butter
Roll up like a jelly roll about 1" in diameter
Chill in the refrigerator one hour
Cut in 1" chunks

**Taste better the second day as peanut butter absorbs into cookie
