2 T minced ginger
1 lb. shrimp, shelled and deveined
2 T soy sauce
¼ coconut milk
½ C shredded coconut
1 tsp. Chile garlic sauce
1 T hoisin sauce
1 C peanuts
3 T peanut oil
1 bunch scallions, chopped
3 cloves garlic, chopped

Directions:
Directions:
Heat oil medium. Sauté scallions, garlic, and ginger 2 min. Add shrimp and sizzle in soy sauce. Sauté for ½ min. Then add all ingredients except peanuts. Sauté 2-3 minutes til shrimp are cooked.
Add peanuts or serve them separately on the table.
Serve with rice.
