12 oz. boneless skinless chicken breast
3 cups cheddar cheese, shredded
⅔ cup finely chopped onion
1-10 oz. package frozen broccoli, thawed, drained
1⅓ cup milk
3 eggs
¾ cup baking mix
¼ tsp. black pepper
⅛ tsp. dried thyme

Preheat oven to 400°. Dice the chicken and cook in 10 inch skillet with 2 T. butter for 10 minutes. In 10 inch pie plate sprayed with cooking spray mix 2 cups of cheese, chicken, onion , broccoli. In medium bowl beat milk, eggs, baking mix, pepper and thyme with wire whisk, until almost smooth. Pour over chicken mixture. Bake 30 to 45 minutes until knife inserted in center comes out clean. Top with remaining cheese, return to oven and bake 5 minutes or until cheese is melted. Cool 5 minutes before cutting. Makes 6 to 8 servings.
