I usually double the recipe...

6 half chicken breasts, skinned and boned
1 clove garlic (about 1 teaspoon) minced
2 tablespoons Italian (flat leaf) parsley, chopped
2 tablespoons cilantro, chopped
1 teaspoon salt
3 teaspoons ground cumin
3 teaspoons sweet paprika
1/2 teaspoon Cayenne pepper
4 tablespoons lemon juice
4 tablespoons olive oil
1 cup mayonnaise

Arrange chicken in a glass or ceramic dish. Mince garlic in food processor
fitted with steel blade. Add all remaining herbs and spices and process.
Add lemon juice and olive oil and puree. Spread half the spice mixture over
all surfaces of the chicken. Cover and marinate, refrigerated, 2 hours.
Refrigerate balance of spice mixture.

Prepare fire in grill. Grill about 3 minutes per side. Meanwhile, mix
reserved spice mixture with the mayonnaise to make sauce.

Serve each piece of chicken with a dollop of sauce.
