¼ cup butter
2 T. cornstarch
1 tsp. salt
¼ tsp. pepper
1 cup chicken broth
1 cup half and half
1 lb. cooked, diced chicken
1 cup frozen peas
2 cups cooked rice

Directions:
Directions:
In a medium saucepan melt butter on med heat. Stir in cornstarch, salt and pepper and cook 2 minutes. Turn heat down to medium low, gradually stir in chicken broth and then the half and half, cook until thickened about 5 minutes. Add chicken and peas and heat thoroughly about 10 minutes on simmer(do not boil). Serve over rice. Serves 4.
