Baked Oatmeal Recipe

2 c Oatmeal
⅓ c Brown Sugar
1 tsp Baking Powder
1 tsp Cinnamon
tsp Salt
c Chocolate Chips
1 c Strawberries
⅔ c Blueberries
1 Ripe Banana
2 c Milk
1 Large Egg
2 tbsp Butter
1 tsp Vanilla

Spray 10x10 casserole dish generously with cooking spray.
Mix Oats, brown sugar, baking powder, cinnamon, salt, and half of the chocolate chips and half of the berries. Stir well and pour into casserole dish and add the other half of the berries and chocolate chips to the top of the mixture. Slice banana and place on top.
In a separate bowl, combine milk, egg, butter and vanilla. Whisk thoroughly. Pour on top of oatmeal mixture. Make sure the oats are soaked evenly.
Bake for 30 minutes at 375
Remove casserole and add 1 tbsp brown sugar to the top of the casserole.
Bake an additional 5 minutes.
