Banana Cake with Orange Icing Recipe

1/4 cup butter, softened
3/4 cup sugar
2 eggs
1 tsp. vanilla
1 cup mashed ripe bananas (about 3)
1 tsp. grated orange zest
2 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 cup buttermilk or sour milk (to sour milk, add 2 tsp. lemon juice or vinegar to 1/2 cup milk and let stand for 10 minutes).

Icing:
1 1/2 cups icing sugar
2 Tbs. plain yogurt
1 tsp. grated orange zest
1 tsp. orange juice

Directions:

Cream butter and sugar together in a large bowl.
Add eggs one at a time, beating after each addition.
Beat in vanilla, bananas and orange zest.
In another bowl, mix together flour, baking powder and baking soda.
Beat into egg mixture, alternately with milk.
Pour into a greased 9 inch square pan.
Bake at 350F for 40 minutes or until done.

Icing:
In small bowl combine icing sugar, yogurt, orange zest and orange juice and mix until smooth.

Spread onto cake once it's cooled.

You will probably remember this cake as I made it many times for dessert on Sundays when Gramma and Papa came over for dinner. I don't remember ever using the yogurt in the icing, so don't worry if you don't have any. It makes a great dessert and also travels well to put in with a packed lunch.
