"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Preheat oven to 350º

If the chicken breasts are thick I slice them so they're thinner

Mix bread crumbs and italian seasoning together

beat 1-2 eggs

heat oil in frying pan

Dip chicken into egg then into breadcrumbs making sure all is covered

Brown chicken both sides and place into baking dish

Place mozza cheese on top of chicken and pour sauce over chicken

Sprinkle with parmesan cheese ( fresh is best)

Bake approx 45 minutes

If cheese is getting too cooked on top you can spray a piece of aluminum foil with nonstick spray and place over top of dish
