Zucchini Casserole Recipe

1/2 large onion, chopped
1/2 large green pepper, chopped
2 stalks celery, chopped
1 large tin diced tomatoes
2 cups zucchini cut into "nickels"
1/2 cup grated mozzarella cheese

Directions:
Directions:
Saute onion, green pepper and celery in butter until softened.
Add tomatoes and zucchini and simmer until tender.

Put into a casserole dish and top with cheese.

*If too watery, add about 1/2 cup bread crumbs into mixture before baking and topping with cheese.

*Also, you could add some herbs like oregano, basil, etc. if desired.

Bake at 350F for 20-30 minutes.

This is one of the first recipes I collected as a young woman. Dad and I had it at Aunt Karen's one night and I asked her for the recipe and she wrote it down for me. It makes a great side dish that goes with just about everything.
