1 roll Pillsbury gingerbread cookie dough - usually available around Thanksgiving

1 box confectioner's sugar
3 tbsp meringue powder (can buy at Michael's or Walmart)
1/3 cup warm water

Directions:
Roll, cut and bake cookies per package direction. I use the smallest cookie cutter I have because they are the cutest.

With a stand mixer, beat icing ingredients about 5 minutes. Add more warm water if needed until icing is thick but can be squeezed through a pastry decorator's bag. Keep bowl covered with plastic wrap while you decorate cookies. This makes enough to decorate about 60 cookies, so if I'm just baking one roll of dough, I cut the recipe in half. You can store any leftover icing in the fridge and re-fluff it by beating in a little more water.

*note
I usually hold back a little confectioner's sugar in the box in case I get icing too thin and need to thicken it back up.
