1 1/2 cup all purpose flour
1/2 cup white sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 cup milk
1/2 tsp. vanilla
1/2 cup vegetable oil.

Directions:

Fruits, nuts or chocolate chips may be added if desired.

Heat oven to 400ºF. Grease or line muffin cups.

Combine dry ingredients in a bowl. In measuring cup beat egg slightly with a fork, then stir in milk and oil.

Combine wet to dry ingredients by making a well in the middle of the dry ingredients. Stir until moistened only. Batter should be lumpy. Fill cups 2/3 way full.

Bake for 20 mins.

*To make pumpkin muffins increase sugar to 2/3 cups and add 1/2 cup pumpkin filling to egg mixture. Add in 1/2 tsp. cinnamon and 1/2 tsp. nutmeg into dry ingredients. Bake same amount of time at same heat.
