Chicken Souvlaki with Tzatziki Recipe

1½ lb. chicken thigh fillets or chicken tenders, cut into 2 inch pieces

MARINADE:
2 T olive oil
¼ cup lemon juice
3 garlic cloves, minced
2 T dried oregano
½ tsp. salt
Black pepper

Pita or Flat bread
Lettuce
Tomato slices
Thinly sliced red onion

TZATZIKI:
2 Lebanese cucumbers or 1 English cucumber (to make about ½ cup grated cucumber after squeezing out juice)
1¼ cups plain Greek yogurt
1 tsp. minced garlic
1 T. extra virgin olive oil (or more if you want richer)
1 tsp salt
1 T. chopped fresh dill
Black pepper

Directions:
Directions:
Place chicken and marinade into a bowl or zip lock bag and refrigerate for at least 3 hours to overnight.
Thread chicken onto 8 skewers.
Heat 1 T. olive oil in a large skillet over high heat or preheat a grill and oil the grids. Cook skewers for 3 minutes on each side, or until cooked through.

Serve Chicken Souvlaki on pita or flatbread with lettuce, tomato, red onion, and tzatziki

TZATZIKI:
Cut the cucumber in half lengthwise. Use a teaspoon to scrape the watery seeds out. Coarsely grate the cucumber using a box grater. Then wrap in paper towels or a tea towel and squeeze to remove excess liquid.
Place cucumber in a bowl. Add remaining ingredients then mix to combine. Set aside for at least 20 minutes for the flavors to meld.

To make ahead, pop the chicken and the marinade in ziplock bags and freeze. Then the chicken will marinate as it defrosts. Thread onto skewers and cook per recipe directions.
