Chicken Souvlaki with Tzatziki Recipe

Ingredients: 1½ lb. chicken thigh fillets or chicken tenders, cut into 2 inch pieces
MARINADE: 2 T olive oil ¼ cup lemon juice 3 garlic cloves, minced 2 T dried oregano ½ tsp. salt Black pepper
Pita or Flat bread Lettuce Tomato slices Thinly sliced red onion
TZATZIKI: 2 Lebanese cucumbers or 1 English cucumber (to make about ½ cup grated cucumber after squeezing out juice) 1¼ cups plain Greek yogurt 1 tsp. minced garlic 1 T. extra virgin olive oil (or more if you want richer) 1 tsp salt 1 T. chopped fresh dill Black pepper

Directions:Place chicken and marinade into a bowl or zip lock bag and refrigerate for at least 3 hours to overnight. Thread chicken onto 8 skewers. Heat 1 T. olive oil in a large skillet over high heat or preheat a grill and oil the grids. Cook skewers for 3 minutes on each side, or until cooked through.
Serve Chicken Souvlaki on pita or flatbread with lettuce, tomato, red onion, and tzatziki
TZATZIKI: Cut the cucumber in half lengthwise. Use a teaspoon to scrape the watery seeds out. Coarsely grate the cucumber using a box grater. Then wrap in paper towels or a tea towel and squeeze to remove excess liquid. Place cucumber in a bowl. Add remaining ingredients then mix to combine. Set aside for at least 20 minutes for the flavors to meld. |

Notes: To make ahead, pop the chicken and the marinade in ziplock bags and freeze. Then the chicken will marinate as it defrosts. Thread onto skewers and cook per recipe directions.
