1 egg (separate white and yolk)
2 tbsp. sugar
1/3 cup sugar
2 tbsp. tapioca
1/4 tsp. salt
2 cups milk
1 to 1 1/2 tsp. vanilla

Directions:
Directions:
Beat 1 egg white until foamy and add in 2 tbsp. sugar and set aside.

Combine in a sauce pan 1 egg yolk, 1/3 cup sugar, 2 tbsp. tapioca, 1/4 tsp. salt, 2 cups milk and 1 to 1 1/2 tsp. vanilla. Let stand for 5 mins.

Cook over medium heat stirring constantly until mixture comes to a full boil. Remove from heat and add gradually to egg white mixture until blended.

Let set for 20 mins, then stir and let cool and serve.
