1 large bunch kale, stemmed and torn into bite-size pieces (about 5 cups)
1¼ pound seedless red grapes cut in half
8 ounces crumbled feta cheese
8 ounces chopped walnuts, toasted
⅓ c. rice vinegar
⅓ c. honey
3 T. olive oil
Salt and Pepper

Directions:

Mix honey, olive oil, rice vinegar together
Toss all other ingredients together in a large salad bowl
Toss the dressing into the salad.

Be sure you really wash the kale prior to steaming. To steam I use a double boiler method. Pot with water, kale in double boiler, bring water to boil with cover on the top and let water boil for about 5 minutes. The kale will be tender. Great in the summer with organic corn chips and some salsa.
