1 cup salad oil
2 large eggs
2 1/2 cup self rising flour
3 cups chopped raw apples
2 cups sugar
1 tsp. vanilla
1 cup chopped pecans

Directions:
Directions:
Preheat oven to 300º. Grease and flour 3 8"-round cake pans. Peel and chop apples and set aside. In a large bowl mix oil, sugar and eggs. Beat until creamy. Add flour a little at a time mixing well. Once all of the flour is added and the mixture is stiff, add the pecans and raw apples. Pour this very thick mixture into the 3 cake pans. Bake until cakes bounce back when touched. Cool on wire racks; turn out of pans.
 

Icing

1 stick butter
2 T evaporated milk
1 cup firmly packed brown sugar
1 box confectioners sugar

Directions:
Directions:
Heat the butter, evaporated milk and brown sugar until the sugar has dissolved. Add enough confectioners sugar to make medium consistency.

Spread on the top of each of the three layers and allow to ooze out of the sides. Do not ice the sides like a regular cake.
