2½ cups rolled oats
1¾ cups mashed bananas
1 tsp baking soda
½ tsp cinnamon
¾ tsp baking powder
¾ tsp salt
1½ tsp vanilla extract
⅓ cup olive oil
½ cup agave or honey (I use ¼ cup of each)
1½ tbsp vinegar

Directions:

Preheat oven to 350º.

Cut wax paper to fit inside the bottom of a well greased 9”x5” loaf pan.

Put oats in blender and blend until a fine powder forms.

Add all other ingredients and blend until smooth.

Pour batter into prepared pan and bake for 23 minutes. Turn oven off but DON’T OPEN THE OVEN. let bread sit in closed oven for anothe 10 minutes. Remove from oven and let cool before removing from pan.
