"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 cup shredded, peeled apples
3/4 cup walnuts, chopped (optional)

Directions:
Directions:
Mix first 5 ingredients together in a large bowl and mix well, about 2 minutes. Stir in apples and walnuts (if using).

Line a 9" x 13" pan with non-stick foil or generously grease and flour. Pour batter in pan.

350º Bake for about 35-40 minutes

Let cook and sprinkle top with cinnamon/sugar mixture (if desired)

This is a very moist, light sort of pound cake. Can serve with whipped cream or ice cream.

Personal Notes:
Personal Notes:
The original recipe from Betty crocker had 1/2 cup butter, no applesauce and was baked in a bundt pan. When I first made it, it stuck to the pan and was very dense and seemed too rich. Above is my modification and I liked it better.
