1/2 cup pumpkin puree
1 large egg
4 Tbsp. butter, melted
1-1/2 tsp. vanilla
2-1/2 cups flour
1 cup sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1-1/2 tsp. pumpkin pie spice
1 cup walnuts, chopped (optional)

Cinnamon (optional)

Directions:
Directions:
Mix dry ingredients together in a large bowl. In a separate bowl, whisk together the pumpkin, butter, vanilla and egg. Pour pumpkin mixture into the dry ingredients and stir until combined. Then fold in the walnuts.

Use non-stick foil lined baking sheet.

Divide dough into logs and sort of flatten on top. If you want small biscotti, make about 6 logs; if you want the traditional size, make 2 logs.

350º oven Bake for 20-30 minutes (depending on size) until the loaves are light brown and feel firm to touch.
Cook for about 15 minutes, and then cut into slices (use a serrated knife). Lie slices flat onto baking sheet and bake about 7 minutes; turn over and take another 6-7 minutes until light brown.
Cool

If desired, melt chocolate and stir in some cinnamon. Turn biscotti on their sides and drizzle with chocolate.
