1/2 cup butter, melted
2 eggs
1 package Jiffy Corn Muffin Mix
2 cups corn, canned or frozen, drained
1 large can creamed corn
1 cup sour cream
Optional Add-Ins
2 tablespoons minced onion, minced jalapeno peppers, half red bell pepper, diced,
1 cup sharp cheddar cheese optional, or crumbled bacon

Preheat oven to 350°F. Grease a 2 quart casserole dish and set aside. Combine all ingredients and spread into the casserole dish. Bake 45-55 minutes or until browned. Serves 8.

I made this recipe for a neighborhood get together. Two ladies almost came to fisticuffs over the last remaining tidbits. It was that good! Needless to say, the recipe has been shared! This is one of my most requested recipes.
