Honey Pizza Dough Recipe

2¼ tps active dry yeast (1pkg)
1 tsp honey
1 cup warm water
2½ cups flour (might need ¼-½ cup more)
1 tsp salt
1 tbs oregano
1½ tsp basil
1 tsp thyme
1 tps paprika
1 tsp ground black peper
1 tbs olive oil

In a small bowl, dissolve the yeast and honey in ¼ cup warm water.

In a mixer, combine the flour, salt, oregano, basil, thyme, paprika and black peper.

Add the oil, the yeast mixture, and remaining ¾ cup of water. With the dough hook, mix on low speed until dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes.

Turn dough out onto a floured surface and knead by hand for 2-3 minutes.

The dough should be smooth and firm. Place in lightly oiled bowl and cover with plastic wrap.

Let sit for about 30-45 minutes. When ready the dough will stretch as it is lightly pulled.

Take dough out of bowl and work by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times.

Place back in bowl and cover with plastic wrap. Let rest 15-20 minutes.

(At this point you can use dough or place in fridge for up to 2 days.)

To make pizza,stretch out onto a greased pizza pan. Top with sauce and toppings. Bake at 450º for 12-16 minutes untill done.
