1 28 oz. Las Palmas red enchilada sauce
1 lb. ground beef
1/2 cup oil
small can of chopped green chilies
small can of chopped olives
3 cups cheddar cheese (approx.)

Directions:
Directions:
Heat a little oil in a small skillet.
When hot, put a corn tortilla in it and flip it right over. You don't want the tortilla to get crisp, you want to be able to fold it.
Put the enchilada sauce in a seperate pan and put it on low heat.
Brown your beef.

Now you're ready to make them:
The skillet you used for heating the tortilla, wipe out the oil.
Now put in a little sauce.
Dip one tortilla in the sauce and coat both sides.
Lay it in a baking dish, put a layer of beef, some chopped green chilies, some sliced olives, some cheddar cheese and a little sauce.
Roll it up, and then do all the others.
Pour remaining sauce over all the enchiladas you made and put the rest of the cheese on top.
Bake at about 350 degrees till it is hot and the cheese is all melted.
