Cream of Broccoli Soup Recipe

1 medium onion, chopped
2 garlic cloves, minced
4 T. butter
¼-½ c. flour (I use ½ we like it a little thick)
5 c. water
16 ounces broccoli
3 chicken bouillon cubes
1 can milk or 1½ c heavy cream
cheese - (I use Velvetta)


Directions:
Directions:
Cook broccoli in a little water in the microwave for about 2-3 minutes. Chop into small pieces and set aside.
Cook and stir onion and garlic in butter until tender but not browned.
Add the flour and mix well
Add the remaining water and the chicken bouillon to the broccoli; bring to a boil.
Stir in salt and pepper to taste. Add the cream and heat again to boiling point but do not boil. Remove from heat and serve.
Makes approx 7 cups or 10 servings.
