Dressing:
2 T olive oil
2 garlic cloves (finely chopped)
1 whole lemon juiced
salt and pepper to taste
freshly grated parmesan cheese

Salad:
12 oz. bag of kale (cut off spine)
1-2 cups croutons

Directions:

Mix dressing ingredients together. Pour over kale and toss thoroughly. Add croutons and grate additional parmesan on top, if desired.
