3 Pounds of Filet Mignon ( use ends and trim )
8 Large Vidalia Onions (Sliced)
2 Garlic Pieces
2 Boxes of Beef Stock
2 tsp. of concentrated Beef Stock
Pepper and Salt
White Wine

Crusty Italian Bread
Gruyere, Swiss, Provolone or Mozzarella Cheese

Directions:
Directions:
Cut Filet into chunks and saute' with small amount of olive oil. Add onions and continue to cook on medium heat. Add wine and beef stock. Add concentrated stock and salt and pepper, Cook down on medium heat for about 2 hours. Remove Filet from soup and cut into bite size pieces. Remove any fat from filet.
To make soup, add soup to a ovenproof bowl. The crusty bread should be stale and cut into smaller bite size pieces. Add bread to soup and top with your favorite cheese.

You can use left over garlic bread and cut into bite size pieces.
