1 small bag Mahatma white rice
2 (8 oz.) Blocks of extra sharp cheddar cheese (grate cheese by hand)
1 stick salted butter
2 eggs
1/2 c. Milk
Salt and pepper to taste

Directions:
Directions:
Cook rice until very soft, then drain. Add butter and 1/2 of the cheese to the hot rice mixture. Stir until melted. Add salt and pepper to taste before adding eggs. Add eggs and milk and keep stirring until completely mixed. If rice mix is not creamy, add a little bit of warm milk until desired consistency. Pour rice mixture into a 13 x 9 baking dish. Bake at 350º for 25-30 minutes, then spread the rest of the cheese on top. Continue baking until knife comes out clean and cheese on top is melted.
