10 manicotti shells
1 pound ground beef
2 cups water
12 ounces tomato paste
½ cup chopped onion
4 ounce can of mushrooms,drained
2 teaspoons salt
2 tablespoons parsley
2 teaspoons oregano
1 teaspoon sugar
1 clove of garlic minced

2 slightly beaten eggs
3 cups or 24 ounces of cottage cheese
½ cup Parmesan cheese
¼ cup snipped parsley
½ pound shredded mozzarella cheese or more

Directions:
Directions:
Cook manicotti shells to al dente, drain. Rinse in cold water; drain.
Brown meat, drain. Add water, tomato paste, onion, mushroom, the 2 tablespoons parsley, oregano, 1½ teaspoon salt, sugar, and garlic. Simmer, uncovered, 30 minutes stirring occasionally.
Meanwhile, combine eggs, cottage cheese, parmesan, mozzarella, the snipped parsley, and remaining salt. Stuff each shell with ½ to ⅓ cup of cheese mixture. Pour half the meat sauce into a baking pan. Top with stuffed shells and pour remaining sauce on top.
Bake at 350° for 30-35 minutes. Let stand 10 minutes.
