6 yams - diced
2 medium white onions chopped
20 pieces of chopped bacon - uncooked
1/2 cu olive oil
salt and pepper
3T Latin Spice rub**

1/2 cu cumin seeds 4 T coriander seeds
4 T chile powder 3 T light brown sugar
4 T Kosher salt 2 t cinnamon
2 t cayenne pepper 4 T black pepper corns

In a small pan, toast cumin, coriander, black peppercorns until fragrant. Grind in spice grinder and combine with other ingredients.

Preheat oven to 400 degrees

Cook bacon in skillet until slightly crispy. Place on paper towels to drain.

Place ingredients in a Ziploc bag and shake to evenly distribute the oil. You may need to add more olive oil to make sure especially potatoes are coated.

Put ingredients together on a parchment lined sheet pan for about 35-40 minutes or so till yams are tender and slightly brown, flipping 1/2 way through.

When we lived in Minnesota, we frequented (a lot!) this little restaurant by Lake Harriet. When we moved we asked for the recipe and the owner gave it to us, I'm sure in part because we were in so often.

After eating there, we always walked to Sebastian Joe's for ice cream! Fond memories.
