Easy Cheesecake Recipe

3 pkg (8 oz ea.) each Cream Cheese
3/4 cup sugar
1 tsp vanilla
3 eggs
1/3 cup crushed graham crackers
1 can (20 oz) Cherry pie filling (optional)

Preheat oven to 325 degrees.

Mix softened cream cheese, sugar and vanilla with electric mixer on medium speed until well blended.
Add eggs; mix until blended.
Spray 9 inch pie plate with no stick cooking spray; sprinkle bottom with crumbs. (I break them up and put them in a quart freezer bag and crush them with my fingers through the bag)
Pour cream cheese mixture into prepared pie plate.
Bake for 45 minutes or until center is almost set. It will still shake a little.
Cool and refrigerate at least 3 hours.
Top with filling.
