2/3 c. softened butter (I use coconut oil) - a healthy version!!
2/3 c. packed brown sugar
1 egg
1 t. vanilla
1 c. all-purpose flour
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 1/2 c. rolled oats
Additional add-ins could be chocolate chips, nuts, etc.

Directions:

1. Cream butter and sugar
2. Add egg, vanilla
3. Mix flour, baking soda, baking powder, and salt in another bowl, then add to sugar mixture.
4. Mix in oats and add-ins
5. Press into a greased 8 x 11" baking dish and bake for 30 minutes @ 350F

This is a recipe from a friend of Meagan's. The boys just love this as a snack. Meagan quite often makes it when they are going on ball and hockey tournaments. A favourite of everyones.
