This recipe changes based on the number of cans of creamed corn you use. I’ve successfully made it with one to four cans. All you have to do is increase the ingredients to match the number of cans.

Ingredients required:
1 egg
1 can creamed corn
3 tbsp onion flakes
¼ tsp pepper
¼ tsp garlic powder
1/2 tsp salt
½ tsp season salt
30 Ritz Crackers (about 1 cup)
6 tsp butter pats

Preheat oven to 350º

In a baking dish, mix the following ingredients:

Start by beating one egg, blend in the seasoning, then add the can of creamed corn and mix thoroughly. Break the Ritz crackers into pieces then mix into the corn. Place the pats of butter on the top of mixture and bake uncovered for 30 minutes.

The top of the corn should be a golden color and should be slightly crusty. If you don’t have Ritz crackers, you can use any type of cracker you have around the house. I’ve used saltines, Club crackers, and Wheat Thins, they change the taste a little, but not much. In larger batches I’ve used several types crackers because I didn’t have enough of one kind. No one has complained!
