Easy Red Lentil Soup Recipe

2 tbsp olive oil
2 carrots, finely chopped
1 onion finely diced
3 cloves of garlic, minced
2 tsp cumin and turmeric
1/2 tsp salt and pepper
1/4 tsp ground cayenne
1 900mg vegetable broth
1 cup dried red lentils
1/4 cup parsley, chopped
3 tbsp lemon juice

Heat oil in large saucepan over medium heat. Cook carrots, onion, and garlic until tender. 3 to 5 minutes
Stir in cumin, tumeric, salt and pepper and cook 1 minute.

Stir in broth and lentils. Reduce to medium low heat. Cover and cook 20-25 minutes.

Stir in chopped parsleyand lemon.

Ready to serve
