1 cup shortening
cup sugar
1 egg, beaten
1 cup cooked and mashed carrots
2 cups flour
2 t. baking powder
1 t. vanilla
t. lemon extract

Directions:
Directions:
Cream shortening, sugar, egg and mashed carrots. Sift or whisk flour and baking powder and add to cream mixture. Add flavorings and mix well. Drop by teaspoonfulls on cookie sheet and bake in preheated oven at 350 for 10 to 12 minutes. Frost while still warm.

Juice of one orange
Grated orange peel
Powdered sugar
4 T. butter, melted

Directions:

Mix juice, butter and orange peel. Add enough powdered sugar for desired consistancy. Beat until smooth. Frost warm cookies.
