1 lb small red potatoes
1 green pepper, sliced
1 red pepper, sliced
1 sweet onion, sliced
3 tbsp butter
salt
pepper
paprika

Directions:
Directions:
Place potatoes in large pot of water to cover. Bring to a boil and then turn down to med-low to simmer until tender when pierced with fork, about 15 minutes. Don't over cook or they will fall apart. Let cool slightly. Slice potatoes in thirds or bite size slices. Melt butter in large pan and add potatoes. Sprinkle with salt, pepper, and paprika and sauce for 5 minutes. Add onions and peppers to pan and continue to sauté, stirring until potatoes are browned and vegetables are tender.
(Also good as a side dish with burgers, steaks or chicken)
