Ingredients:

1 cup Uncle Ben's long grain rice
2 cups water
4 eggs or 4 egg yolks
1 cup sugar
1/2 cup raisins
2 cups milk
3 cups heavy cream
2 tsp vanilla
1/4 tsp salt
ground cinnamon or nutmeg
Whipped cream if desired

Directions:
Directions:
Cook Rice and water in covered saucepan until all water is absorbed (14 minutes)
Heat oven to 325' F
Beat eggs and sir in sugar,salt,raisins,vanilla,milk,heavy cream, and hot rice
Pour into 1 1/2 qt casserole and sprinkle with cinnamon
Bake uncovered -45 min -DO NOT OVERBAKE -top will still be wet and not set

Let stand 15 minutes

Serve warm or Refrigerate 3 hours
Serve with Whipped Cream if desired
