1 large onion, chopped
1 (2 ¼ lbs.) winter squash or pumpkin (Hubbert Squash)
1 sweet potato
2 T. olive oil
1 c. milk
1 c. chicken stock
salt and pepper
2 tsp. sugar
4 tsp. butter
¼ c. canned skim milk

Toasted country bread

Directions:
Directions:
Peel sweet potato and squash and cut into chunks. Sauté onion in olive oil, add squash and sweet potato. Cook low heat - 5 minutes, add milk and broth to cover, add salt, pepper, and sugar. Cook on low heat 30 minutes. Purée, add butter and canned milk and heat. Serve with toasted country bread.
